Lotus Cheesecake

Ingredients:

462 grams cream cheese

187 grams sugar

5 grams vanilla 

3 eggs

130 grams cream

130 grams lotus paste

10 grams lemon juice

360 grams lotus cookies

180 grams butter

Preparations:

1. Preheat oven to 150.

2. Cover the mold with aluminum wrap

3. Prepare the base by crushing the cookies in the food processor with the melted butter. Place it in the mold and press it. Prebake the base for 10 minutes and let it cool.

4. In a mixer with a paddle, cream the cream cheese for 2 minutes then add the sugar and keep mixing till it becomes soft and fluffy for about 5 minutes.

4. Add the eggs one at a time, and creaming between each.

5. Gradually add cream, vanilla, lemon juice and lotus paste 

6. Fill the mold with batter and bake it for an hour in a water bath.
